In the Kitchen

Finally today I was able to make some good tasting and good looking chocolate chip cookies for Todd. Seriously, in person they look beautiful and Todd says they taste awesome (he wanted me to hurry and make some more before I forgot but I said no). I was sure to write down exactly what I did so that hopefully next time I'll end up with the same end result...we'll see.


I also made pizza today for dinner. I've been working on the recipe for awhile and tonight it was way good so I thought I'd share.
In my mixer I mixed...
3 cups warm water
6 Tablespoons yeast
3 Tablespoons sugar
2 teaspoons salt
9 Tablespoons milled flax seed
3 Tablespoons canola oil
6-7 cups flour ( plus flour when you roll it out)

Combine water yeast and sugar, stir and then add flax seed and oil and let sit for a minute until you see bubbles from the yeast. Add your Flour and salt, roll out and put onto lightly greased pizza pan. Bake at 400 for 10 minutes, remove and add toppings, and then cook for another 10 minutes. It makes 4 large pizzas so I freeze half the dough and use it the next time :)

You can find milled flax seed at walmart in the baking section. It is used as a substitute for oil and has 1/2 the fat, 6 grams more fiber(oil has 0) and 41/2 grams more protein (again oil has 0)...plus, I like the flavor.

I grind my own wheat and then do half wheat flour and half white.

These boys have soo much fun together at the softball games each week! They usually end up pretty tired (note the picture of Wes asleep with a bowl in his mouth in the upper left hand corner) and filthy by the end and that is just fine with me!

Lego Table

Neal and Stacy gave us this lego table which we LOVE. It has a lid so when Wes is done playing we can put it away and it looks nice. Wes likes to play with the legos but has also discovered another fun way to use the table. First, its fun to climb on.
Second, it is a lot of fun to slide the legos one by one into a big pile on the floor.
Finally, when all the legos are gone he slides down himself. He usually repeats the sliding down himself several times until he decides he is done and leaves all the legos on the floor and moves on to another mess :)

Shanell the Missionary

Shanell left today for her 18 MONTH Mission to Tempe Arizona (spanish speaking). My eyes are starting to water just thinking about it. We are only 15 months apart, shared a room almost our entire life, and are best friends. Needless to say I'm going to miss her. I've already thought about calling her at least twice but since she can't have a phone it would be pretty pointless. I know life will go on and before you know it she will be back...but for today, I'm sad.

Easter Day

Easter Egg Hunt at Grandma Hart's. Since Wes had an egg hunt the day before he knew just what to do and it was too cute. He would carry his bucket around and then see and egg and set down his bucket so he could run to get the egg and bring it back.

Easter Campout

We had such a blast this year at the Wilkins Family Easter Campout. It was too cold to actually camp but we still had fun Friday night and Saturday. On Saturday there was an egg hunt for the little kids, teenagers, and even the adults. Wes had fun during his hunt and was finally getting the hang of it by the end. In the adult hunt Todd was one of the lucky few that found an egg and we were able to bring home an antique embroidery that my great grandma had made during the 1940s! There was also an egg toss for all of the couples and somehow Todd and I Won! I actually dropped the egg several times but it never broke until the very end (on Todd's side :)

Connor's Birthday was last month, but since we were in Hilton Head I just got around to making his cake. Shanell and I had a blast making this cake and Connor thought it was awesome :)

I wanted a new dress...

So I made one...actually two. Wes tried to help and thought that the scrap fabric was really fun :)

I whipped this up to wear over my swimming suit. You would think that after living in Puerto Rico and Hilton Head and going swimming almost every day I would have a few cute cover ups, but nope, this is the first. I didn't exactly have a pattern so I wasn't exactly sure how it would turn out but I think it looks alright.

This dress I did have a pattern for and it didn't turn out as well. I guess it would be alright if I were a few months pregnant but since I'm not I think it looks kind of frumpy. Oh well...better luck next time :)

It was so fun to have Todd's grandparents in Missouri for a week! They were finally able to see Wes :)
